Drawing from his global adventures, he’s inspired by Bermuda’s vibrant local ingredients and is eager to showcase their brilliance. His favorite dishes highlight his versatility: a showstopping dry-aged ribeye, paired with a rich cognac and peppercorn sauce and island-grown roasted carrots, and a perfectly seared swordfish with zesty citrus relish and herbs grown just steps away. With every plate, Hamish aims to blend the flavors of his international experience with the unique essence of Bermuda.

Barry's journey has been extraordinary, from leading teams in world-renowned destinations like Bangkok, London, and Singapore to hosting his own cooking show and authoring culinary books. Now back in Bermuda, he's excited to reconnect with his island family and bring his signature warmth and hospitality to The Waterlot.
